At the farmer’s market last week, we picked up this delicious lemony artichoke dip for the low low price of $10. I’m reading the ingredients and doing the math in my head… marinated artichokes, garlic, olive oil, lemon, sea salt… yep, that’s a 400% mark-up. Let’s try this at home kids.
Artichoke Lemon Dip – shortcut version
- 1 container Trader Joe’s roasted marinated artichokes (they’re usually near the hummus and dips in the refrigerated section)
- 1-2 lemons, to taste
- Sea salt
In a food processor, pulse the artichokes plus 1 teaspoon of the oil they were marinated in, until roughly chopped. Add the juice of ½ lemon and pulse several times. Taste it. If you’d like it more lemon-y, add more lemon juice until it’s just right. Sprinkle with sea salt and serve with bite size pita crackers.Pin It
